This was excellent! I came up with this based on my grandmother’s traditional wheat flour recipe. I added the flaxseed meal to make it more healthful. YUM!
1 cup sugar (I actually used less than one cup – make 3/4 c – and sprinkled the top with cinnamon and sugar)
1/2 cup unsalted butter
1 cup bananas (2 bananas)
1 cup Bob’s Red Mill GF all purpose baking flour
1/4 cup brown rice flour
3/4 cup Bob’s Red Mill flaxseed meal
1 tsp baking soda
1 1/2 tsp Xanthan Gum
3/2 cup nuts
Cream butter and sugar together. Add eggs and crushed bananas. Add dry ingredients to mixture, then add nuts. Bake in a loaf pan for 1 hour at 350 degrees F.
